Les Forces du Riesling

Le cépage riesling fait partie de la royauté des vins d’Alsace depuis la fin du XVe siècle. Le grand cépage rhénan qu’est le riesling vit actuellement une deuxième heure de gloire. Il fait saliver de nouveau les gourmets en se retrouvant sur presque toutes les tables des amateurs de bonne chair. Le riesling possède une robe jaune pâle avec des reflets verts. Son bouquet est d’une grande finesse, racé, avec de subtils arômes fruités (citron, poire, fruits compotés…), floraux (tilleul, fleurs blanches…), ou encore des touches d’anis, de cumin et de réglisse.

Cette structure racée et fruitée fait de lui un partenaire idéal pour les poissons et les fruits de mers. Les sushis et la sauce soya sont riches en acides aminés, il faut donc, soit du sucre, soit du volume ou de la texture pour réussir l’union. La sauce soya combinée à l’acidité d’un vin donne l’impression de rehausser la rondeur de ce dernier, donc un vin avec une bonne acidité est un choix judicieux. De plus, la fraîcheur poivrée et vinaigrée du gingembre requiert un riesling vif, plein et mordant.
